| Built for professional ideal sharpness and ease of use The blade is made of rust-resistant 13 chrome stainless steel and the highest-grade molybdenum* vanadium steel in blade steel, and is manufactured with the latest equipment and advanced technology. Hygienic handle that can be sterilized with water and chemicals at high pressure and high temperature. Blade and handle are one-piece construction with no gaps, making it extremely hygienic. The base of the blade is sharpened by professional technicians using rough and medium grinders to facilitate resharpening before the blade is fully sharpened. After quenching at 1050°C, the blade is cooled down to -155°C or lower to give it high hardness and toughness, further enhancing its cutting ability.
