Description
[What is Sake Coffee?] Sake Coffee is a "sake-scented coffee bean" made by soaking green coffee beans in sake, transferring the flavor of the sake to the green coffee beans, and then roasting them. [About the Brewery] The brewery is Kumazawa Sake Brewing Company, founded in 1872. [Under the company motto "Yoppari makes Japan rich," the company plays a central role in local culture as the only remaining sake brewery in Shonan. The company's business is not limited to sake brewing, as it has been since its founding. The company also produces beer* and spirits, operates restaurants, bakeries, and other eateries*, collaborates with events, and carries out various initiatives to stimulate "place and people" such as the Sake Rice Project. [Sake used] Craft gin [Hakutengu] Normal by Kumazawa Shuzo was used. The name is derived from the characteristics of the region, which has many tengu legends. This product was released in 2021. This is the first distilled spirit by the Kumazawa Brewery in 100 years. The brewery's unique production method is noteworthy. First, rice spirits are made from a base of shochu made by re-fermenting ginjo lees (sake lees). Then, only juniper berries, which have a woody bitterness and sweetness, are soaked as a spice, and distilled in three steps. [Taste as a sake coffee]. The botanicals are simply juniper berries only [shiro-tengu], but the particular manufacturing process gives it a deep flavor. [Some say it has a subtle sweetness from the sake lees shochu. 酒珈琲は、コーヒーの生豆をお酒に漬け、お酒の風味を生豆に移した後に焙煎した”酒が香るコーヒー豆”です。
【酒造について】
酒造は、明治5年創業の熊澤酒造株式会社。「よっぱらいは日本を豊かにする」を社是に、湘南に残る唯一の酒蔵として地域文化の中心地の役割を担う。
事業は創業以来続く日本酒造りだけに留まらない。ビール・蒸留酒の製造、レストランやパン屋などの飲食店の展開・運営、イベントとのコラボや酒米プロジェクトなど、「場所と人」を刺激する様々な取り組みを展開している。
【使用したお酒】
熊澤酒造のクラフトジン「白天狗」ノーマルを使用。名前は天狗伝説が多く残るという土地の特徴から。
本品は2021年に発売された商品。熊澤酒造が手掛ける100年ぶりの蒸留酒となった。
注目すべきは蔵元ならではの製法。まず、吟醸粕を再醗酵させて造った「粕取り焼酎」をベースに、ライススピリッツを造り上げる。 そこにスパイスとして、ウッディーな苦み・甘みを持つジュニパーベリーのみを漬け込み、3回の工程で蒸留するしていく。
【酒珈琲としての味わい】
ボタニカルはシンプルにジュニパーベリーのみの「白天狗」だが、こだわりの製法によって深みのある味わいに。「粕取り焼酎」のほのかな甘みが感じられるという声も。
絶妙なバランスに仕上げられた「白天狗」と、コーヒーが織りなすハーモニーが新鮮。
