Description
[What is Sake Coffee?] Sake Coffee is a "sake-scented coffee bean" made by soaking green coffee beans in sake, transferring the flavor of the sake to the green coffee beans, and then roasting them. [About the Brewery] The brewery is Taragawa Corporation on Miyako Island, Okinawa Prefecture. Ltd. on Miyako Island, Okinawa Prefecture, with a history of more than 70 years of Awamori brewing in a rich natural environment consisting of coral reefs. The brewery continues to weave its passion for old sake by taking advantage of the mellow bounty of Miyako Island. [Sake used] Miyakojima rum [MAKUGAN] is used. The name comes from the dialect name for coconut crab. It is a familiar creature on Miyako Island, and also conveys a message of respect for nature. This product is made with Miyako Island water * yeast * sugarcane * sake craftsmen, and is made with a commitment to being from Miyako Island. The hard, mineral-rich water unique to Miyakojima, which was formed by the uplift of coral reefs, produces a core of pure sake. Miyako Island's original yeast [MY17 strain yeast] contains a large amount of sweetness, giving it a mellow and pleasant aroma and taste. Sugarcane molasses is always fresh at a direct distance from the brewery. These ingredients are utilized to create a flavor that is not overly clean. [Taste as Sake Coffee] The elegant aroma peculiar to rum is passed through in a whiff. The nutty aroma of Brazilian coffee is noticeable. The caramel-like sweetness unique to [MAKUGAN], which is made with ingredients from Miyako Island, mixes with it to create a complex and deep flavor. 酒造は、沖縄県宮古島の「株式会社多良川」。
珊瑚礁からなる自然豊かな地で、泡盛を造り続けて70余年の歴史を持つ。
宮古島の芳醇な恵みを活かし、古酒への思いを紡ぎ続ける。
【使用したお酒】
宮古島ラム酒「MAKUGAN(マクガン)」を使用。名前はヤシガニの方言呼称から。宮古島で馴染み深い生き物であること、自然を大切にというメッセージも込めて。
宮古島の水・酵母・さとうきび・酒職人と、宮古島であることにこだわった一品。
珊瑚礁が隆起してできた宮古島ならではのミネラルを多く含んだ硬水が、芯のある原酒を。宮古島産原生酵母「MY17株酵母」は甘味を感じる成分を多量に含み、まろやかで心地良い香りと味わいを。さとうきび糖蜜は酒蔵から直行できる距離で常に新鮮。
これらの原料を活かし、クリーンになりすぎない味に。
