It was only recently, after World War II, that the Japanese began to eat more meat and dairy products. In Japan, which is surrounded by the sea on all sides, seafood from the sea has traditionally been the main side dish, along with rice, vegetables, and beans. However, fresh seafood was not always available, and some areas were far from the sea, so truck transportation was not available as it is today. As a result, various efforts were made to preserve fish and shellfish in a form that would be easy to preserve.

This series consists of three volumes: Volume 1 [Dried Seafood], Volume 2 [Kamaboko], and Volume 3 [Fish Roe], and introduces what kind of seafood from the sea, how it is processed, and how it enters our mouths, as well as the background (merits, history, etc.) of such foods, actual processing methods, and various types.
