| [Kairagi glaze is called "Kairagi" because it resembles the surface of the stingray skin wrapped around the handle of a sword, which is called "Kairagi Umehana-hide". The simple yet intricate pattern is a taste that cannot be achieved with mass-produced products. It can be used for both Japanese and Western dishes, and brings out the best in foodstuffs.
