| *New style chapatti bread Tilakita has been selling traditional style chapatti pans, but this new chapatti pan is made of cast iron. It is thicker (approx. 4.5mm) and heavier than conventional chapatti pans, and has a high heat storage capacity, and the rough texture of the cast iron surface is just like the front line of chapattis. Indian cooking utensils have come this far*! The cast iron construction is solid and has been used by generations of cooks. Made of solid cast iron, it is a quality that can be passed down from generation to generation. Of course, like conventional chapatti pans, it has a slight curvature, which allows heat to be transferred to the dough without waste. The handle gets hot, so please use the denim cover provided. *The staple food of Indian cuisine is often thought of as a large, sweet naan, but in fact the most commonly eaten staple food is chapatti, which is made from whole wheat flour, stretched thinly and baked using only water. Chapatti is an extremely simple dish, but it is a very healthy and tasty thin bread with a simple flavor and savory aroma that makes it a staple food. The chapati pan is a special pan designed just for baking chapati. *Care, etc. Since the pan has already been seasoned, it does not need to be broken in like an iron pan. It can be used immediately after being lightly rinsed and dried. After use, wash it lightly again, let it dry, and spread a thin layer of oil on it, and the seasoning will continue to build up and grow. Please avoid contact with acidic substances such as tomatoes and lemons, as the oxidized film will peel off. Also, it is normal and safe to see black residue on the towel when drying. This is caused when the layer of seasoning is not completely bonded to the metal and is common to all brands. If you season your towel every 10 uses or so, it will be more stable and last longer.  |

ティラキタではこれまで伝統的なスタイルのチャパティパンを扱ってきましたが、今回入荷したこちらのチャパティパンはキャストアイアン(鋳鉄)製のチャパティパンです。
従来のチャパティパンに比べてさらに厚み(約4.5mm)がありどっしりと重いため蓄熱性が高く、更に鋳物ならではの表面のざらりとした質感はまさにチャパティ最前線といった趣があります。インド調理器具もここまで来たか・・・!と思わず息をついてしまいますね。しっかりした鋳鉄製で、世代を越えて受け継ぐことのできる品質です。
もちろん従来のチャパティパン同様僅かな湾曲がありそれが無駄なく生地に熱を伝える仕様になっています。持ちてが熱くなりますので付属のデニムカバーをご使用ください。
■インドの主食 インド料理の主食というと、甘くて大きなナーンをイメージされる方が多いと思いますが、実際に一番食べられているのは全粒粉を水だけで薄く伸ばして焼き上げた「チャパティ」です。極めてシンプルな料理ですが、主食になるのもうなずける、素朴な味わいに香ばしさが活きた大変ヘルシーで美味しい薄焼きパンです。チャパティパンはそんなチャパティを焼くためだけにデザインされた特製のフライパンなのです。
■お手入れなど
すでにシーズニング処理がされていますので、鉄鍋のような焼き慣らしは必要ありません。軽く水洗いして乾かしたらすぐに使うことができます。使用後また軽く洗って乾かした後に薄く油を広げれば更にシーズニングが層を成していき、成長していく楽しみがあります。
酸化被膜が剥がれてしまいますので、トマトやレモンなど酸性のものが触れるのはお避けください。また、乾燥させる際にタオルに黒い残留物が付着するのは正常で安全です。こちらはシーズニングの層が金属に完全に結合していない場合に発生するもので、どのブランドでも共通のものとなります。
10回程度の使用ごとにシーズニング処理をしていただけますと、更に安定して長くお使いいただけます。
