This item is coated with glaze. Glazes are used for a wide range of ceramics for various purposes, such as protecting the ware from stains, preventing moisture from penetrating through the glaze, and increasing the strength of the ware. This is called "kan-in," a phenomenon in which the hardened glass layer cracks due to the difference in shrinkage between the base material and the glaze. Basically, the glaze shrinks more, so the penetration occurs on the surface of the glaze, not on the ceramic. Since the penetration is not caused by impact, there is no problem with the strength of the piece.
Small flakes of material or raised borders may be seen on the surface or edge of the dish, which is due to a phenomenon known as ishihaze. Glazes are mainly composed of earth and stones, including quartz and feldspar, and ishibaku is a condition in which stone grains in the glaze are exposed or bounce off the surface during quenching. Since this is an unavoidable phenomenon in manufacturing with materials of natural origin, it is not regarded as a defect by those who enjoy Shigaraki ware and other ceramics, but is preferred as a scenery when appreciating and touching the ware.
