Bread knife made in Tsubame-Sanjo.
The balance between price and quality was determined to make this bread slicer a suitable first knife.
The blade is made of domestically manufactured molybdenum vanadium steel with a mirror finish, and the handle is made of natural rosewood, which has a calm wood grain texture.
The blade edge, which is the lifeblood of a kitchen knife, is finished with a corrugated serrated blade by craftsmen in Tsubame, Niigata.
With a blade length of 23.5 cm, it is the size of a standard bread knife, and can easily cut a loaf of bread or wide loaf of French bread without stress.
It can be used for all types of bread, from freshly baked soft bread to firm French bread. The smooth cross-section of the cut is a quality only a specialized tool made the way kitchen knives are made.
The key to the smooth cross section is the cutting method of pushing and pulling back and forth using the catch of the serrated blade, without pressing the blade hard from above against the food.
Weighing 97g, it is lighter than similar products. Despite the long blade length, the emphasis is on ease of use.
The blade is designed to prevent fingers from hitting the cutting board even when cutting all the way down to the bottom of the bread.
