| We call our "katsuobushi shaving machine" "katsuobako" (dried bonito box). This product is an original product of our company, which has been making dried bonito shavings since the Showa period. The bonito shaver [katsuobako] uses a high-grade blue paper steel blade, which is also used for kitchen knives. The outer box is made of paulownia wood, and the planing board is made of oak wood. Aogami steel is a type of Yasugi steel, which is also famous for kitchen knives. The blade is very sharp. Please try the feeling of being able to sharpen with a shuffle. A good blade is gentle against dried bonito flakes and keeps its sharpness for a long time. We recommend this paulownia box x blue paper steel sharpener. Bonito flakes are divided into male (dorsal) and female (ventral) flakes. One piece of bonito produces 4 pieces of dried bonito flakes (2 male flakes x 2 * 2 female flakes x 2). [Male joints (dorsal side) The taste is stable and less peculiar when made into dried bonito flakes. If you are not accustomed to shaving, it is easier to shave the male shavings. [Female joints (ventral side) Since it is the belly, it contains a lot of oil and can easily turn to powder when shaved.
