Description
[Sake Coffee is "sake-scented coffee beans" made by soaking green coffee beans in sake, transferring the flavor of the sake to the green coffee beans, and then roasting them. [About the Sake Brewery]] Atsugi's only sake brewery has been in business since 1818, the first year of the Bunsei Era (the late Edo Period). The brewery offers a wide range of products, including sake [Sakarimasu], which won gold medals at the National New Sake Competition in 2021 and 2022, as well as craft beer and craft gin. [The brewery has been brewing sake and other alcoholic beverages for 200 years, and one of its characteristics is the use of locally produced ingredients. The brewery is also famous for its Junmai-shu Denshiro, made with locally grown rice Harumi, its rice shochu Yataro, and its seasonal craft beer made with peaches grown in Atsugi. The brewery is constantly evolving, expanding the culture of sake by not only producing good sake, but also incorporating local ingredients. [Coffee beans used] This is a specially selected coffee from the [Golden Coffee Zone] grown in the Ilamatepec Mountains area of El Salvador. After pulp removal, the fresh coffee beans are fermented* and washed in pure water collected from the mountains, and then carefully dried in the traditional sun-drying process. After drying, the beans are stored in wooden silos and threshed for export. The coffee beans are highly valued in major markets such as Europe, the United States, Japan, Canada, Australia, and Taiwan. [Alcoholic Beverages Used] Mead is a historic drink made by fermenting honey, water, and yeast, and is believed to be the oldest liquor known to mankind. We used honey from Odawara, which is produced by Asamizu Beekeeping and Sales in Odawara, and combined it with famous water from Higashi-Tanzawa, which is also used for brewing sake. The brewing process utilizes the extensive experience of a sake master brewer, and carefully selects the best wine yeast for mead from among many yeast strains. It is characterized by a gentle aroma and sweetness derived from honey, with a refreshing aftertaste. Another appealing feature is that it is unfiltered and slightly cloudy in order to enhance the original flavor of mead. Taste as a [brewed coffee].
