インドで古来から使われてきた、石の板のスパイスつぶし。インド料理の歴史の発展とともに生まれ育まれてきたと言っても過言ではない、非常にプリミティブな調理器具です。
「ただの石じゃないか」と思いがちですが、実はこの石製のスパイスつぶしが、美味しいインド料理を作る一つのコツなのです。
石製のスパイスつぶしは、スパイスを潰す際に熱を出しません。スパイスの香りが熱で飛んでしまうことがありますので、スパイスを潰す際には極力熱を出さずに潰すのがいいのです。
また、こちらはホールのスパイスを荒めに潰すのに使われます。ホールのカルダモンなど、スパイスによっては、あまり細かく砕いてしまうと持ち味が失われます。石製のスパイスつぶしならば、ゴツン、ゴツンとやるだけでスパイスが簡単に潰れますし、また、スパイスの潰し加減も自由自在なので、スパイスの持ち味を100%引き出すことができます。
