Description
| Laurel cutlery was first produced in Japan in 1911. The basic design is in the Rococo style, which was the mainstream in the middle of the 18th century in Europe, and is characterized by its curved patterns and elegant sentiment. In French culinary etiquette, silverware is placed face down on the table. This is the reason why the back of this Laurel is also decorated with a pattern. The blade of the knife has the features of the knife used in Europe since ancient times: Shinogi-shinogi and Mokutsu (through-hole). Shinogi is a groove on the blade of a knife, and is found on European swords and Japanese knives. The groove was created to prevent a vacuum from forming when the sword is thrust into the blade, making it difficult to pull it out. Mekoshi is a polishing technique used to remove the surface luster of a sword. It is said that both Shinogi and Metsukoshi are the remnants of the way hunters used swords for meals. The more it is used, the more the color of the silverware becomes darker and darker. Laurel continues to stand the test of time, more than 100 years after its birth. |

フランス料理の作法では、銀食器を裏側に伏せてテーブルに配置します。
その習慣からこのLaurelの裏側にも紋様が描かれています。
ナイフの刃には「鎬‐しのぎ‐」と「目通し」というヨーロッパで古より使われてきたナイフの特徴が入っています。
鎬とはナイフの刃の刻み溝で、ヨーロッパの剣や日本刀などに見られます。
剣を突き刺した際、真空状態になり、剣が抜きにくくなるのを避けるためにできた溝です。
目通しとは、刀の表面の艶を消す研磨技法です。
鎬も目通しも狩猟民族が食事のおりに剣を使った名残りと伝えられています。
使い込めば込むほど、味わいのある銀器のしぶい あめ色になってきます。
