The extreme north of a kitchen knife
This is a kitchen knife, not a kitchen knife. This is a katana.

This series is made of Hitachi Yasugi steel (HRC62) developed by Hitachi Metals, Ltd. and manufactured*finished by knife craftsmen in Seki city, Gifu prefecture, one of the three major production centers of kitchen knives.
As the name "Bolts" indicates, there is no excessive layering or decoration on the blade, and the contrast between the heartwood and the sidewood of the blade part gives off a dazzling brilliance. Depending on the angle from which you look at the blade, you may encounter the fascinating charm of steel, which is different from that of stainless steel.
Of course, it is not enough for a knife to be hard; there is a balance. We understand that. However, it was inevitable to use the best and most innovative materials as we challenge to the extreme north.
We do not recommend using a simple sharpener to sharpen Katana. Please use a whetstone to sharpen the blade yourself. You will get a great sharpness with the best angle of the blade for you!
Yes, the Katana is a rare knife that is designed to be sharpened with a whetstone. You can say that Katana is a knife that is meant to be sharpened and cared for.
It comes in a paulownia wood box with black foil stamping. It is not only for the purpose of storage, but also for the purpose of looking at the blade. It is the satisfaction of owning a katana.
Finally, a sword that does not cut is not a sword.

*About Aogami No.2 Steel*.
In ancient times, Shimane Prefecture was a place where iron manufacturing using a process called tatara, which uses high-quality iron sand as the raw material, flourished. Hitachi Metals' Yasugi Works in Yasugi City, Shimane Prefecture, inherited this Japanese steel tradition. The high-grade specialty steel produced there is YSS YASUKI HAGANE.
[Aoshi No. 2 steel, a type of YSS YASUKI HAGANE, contains compounds of chrome (for toughness* and hardenability), tungsten (for wear resistance), and carbon, making the steel itself harder and more tenacious than blank steel. The "No. 1," "No. 2," and "No. 3" designations refer to the carbon content of the steel and do not indicate the superiority or inferiority of the steel.

*Note*.
The core material of this product is steel. Therefore, it will rust. Please clean and wipe off water completely as soon as possible after use. 2020New
