Description
| This knife has a stainless steel handle with a middle structure that makes full use of the welding*polishing techniques developed in Tsubame City, a town of tableware. Tsubame City in Niigata Prefecture is now known throughout Japan as Tsubame-Sanjo, a major center of the metalworking industry. Originally, Tsubame City started manufacturing Japanese nails in the early Edo period (1603-1867), and then began to make kiseru (wooden paddle), files, hammered copperware, and western tableware, and exported these products earlier than any other industry in Japan. Since then, Tsubame-shi has been exporting its products to other industries in Japan, and its high technology of metalworking has been recognized by many people all over the world. Each knife is carefully sharpened by a skilled craftsman one by one by water polishing. The molybdenum-vanadium oxide used for the blade material has high hardness and is excellent in durability. |
