The first coffee shop in Japan [Kahisakan] opened in 1888, in the middle of the Meiji period (1868-1912), when politics, society, and the city were undergoing major transformations. Coffee itself had already been introduced to Japan some 200 years earlier and was consumed as a medicine, but it is said that it was the founder of Kahisakan, Tei Yong Kei, who brought coffee into modern urban life and made it a fixture in people's daily lives and culture. The founder of Kayo Chakan, Tei Kei Chung, is said to have been responsible for the establishment of the teahouse. Today, [Japanese coffee] is considered the world's best and finest brand in terms of quality, technology, and methods. However, surprisingly few Japanese are aware that Japan is one of the top three coffee consuming countries in the world and that Japanese coffee is a world leader in the industry. This book does not follow recent trends in coffee culture. It is a cultural history of Japanese coffee and coffee shops written by an American anthropologist based on years of research and fieldwork. How did Japanese coffee, now acclaimed as the best quality in the world, come to be? To find the answer, this book not only traces the history of coffee itself, but also describes the changing nature of Japanese society, the lives of the people who live there, the various cafes and coffee shops, and even contemporary urban customs through in-depth interviews with craftspeople and customers who insist on their handiwork.
