[The coffee beans are soaked in sake, and the sake flavor is transferred to the green coffee beans before roasting. [About Brewing] The brewery, Izumibashi Sake Brewery, was established in Ebina City, Kanagawa Prefecture, in 1868. [The company's sake brewing process starts from the cultivation of rice, based on the belief that sake brewing begins with rice cultivation. The brewery sticks to traditional sake brewing and carefully finishes its sake using traditional methods and techniques. The characteristics of the soil, the individuality of the producer, and the characteristics of the rice are also identified and reflected in the handcrafting process. The result is sake with a natural depth of flavor. [Sake used] [The sake is distilled from sake lees using the vacuum decompression distillation method, a technique that brings out the flavor of the raw ingredients and produces a beautiful, deep taste. We added sweet and refreshing strawberries grown at the Ebina Strawberry House to make strawberry shochu.
